Controlled fermentation, a darker and rounder character
The dark counterpart to Rami Leaf Tea. Leaves pass through controlled fermentation before drying, giving a deeper brew colour and a rounder taste than the green version.
Ramie leaves from the same source as Rami Leaf Tea, at a different leaf maturity.
Withering, rolling to break down leaf tissue, controlled fermentation at held temperature and humidity, then drying to stop the reaction at the intended point.
The fermentation end point is set through repeated observation, not guesswork. Stopping too early leaves a raw note; stopping too late erases the ramie character that makes the tea distinct.
Steep one bag in 200 ml of water at 90–95 °C for 4 minutes. Best taken unsweetened.
